ROASTED ONION WINGS



ROASTED ONION WINGS

 INGREDIENTS:

  • Maida Flour- 2 spoon
  • Gram Flour(Kadalai Mavu)- ½ spon
  • Corn flour- 1 spoon
  • Onion- 1(big)
  • Omam-1 spoon
  • Black pepper- small amount
  • Salt-As per need
  • Soda- one small cup

Preparation:
  • Take a bowl and add Maida  Flour to it. Add Gram Flour  and Corn Flour to it.
  • Crush the Omam  and add to it.
  • Add black pepper powder to it and mix it well by adding some water to it.
  • Then add soda  and mix it well till it get ready to merge the onion wings to it.  Soda adds flavour to the onion wings.
  • Add Salt  as per need.
  • Take a pan and add oil to fry it.
  • Cut the onion in to rings  as shown and dip in the mixture.

  •  After the oil get heated, put one by one onion rings to it.
  • Wait still it get fried and take the wings.
  • Now the  hot spicy onion wings get ready to serve.We can serve this dish to children as snacks.


CORAINDER MINT KULAMBU



CORAINDER MINT KULAMBU

          Mint leaves (Pudhina) are very good for stomach ache and it cure the chest pains. It cures all stomach ailments including indigestion. It has many medical properties. Corainder Leaves helps in lowering blood glucose levels in diabetics.
It also helps in digestion, helps settle an upset stomach and prevent flatulence.

Ingredients Needed:

  • Corainder Leaves- Small bunch
  • Mint Leaves- Small bunch
  • Red Chillies- 4
  • White Ulundu- 2 spoon
  • Tomato- 2
  • Onion- 100gms
  • Black Grams- 1 spoon
  • Curry Leaves- few


Preparation:

  • Take a pan and add one spoon of oil to it. Fry the Ulundu by adding it.
  • Then Add onion, tomato to it and wait until onion gets light brown colour.
  • Add Red chilly to it.
  • Then wash the  coriander and mint leaves and add to it and  fry it.
  •  Allow it to cook for  few minutes.
  • Then allow it to make cool and grind all the above fried ingredients by adding salt to it.
  •  After grind, take a pan and add oil to it.
  • Add Black mustard seed to it and curry leaves and fry it.
  • Now add the grinded paste to it and add water as per requirement.
  • Allow it get boil for few minutes.
  • Now the hot Corainder Mint kulambhu get ready. It can be serve with dosa and idli.

ORANGE PULAV

INGREDIENTS NEEDED:

Basmathi Rice- ½ cup
Orange Juice- ¾ cup
Milk- ¾ cup
Brinji leaf- 1
Sombu/ Fennel Seeds-1/2 spoon
Pudina Leaves- as per need
Cardamom- 2
Cinnamon stick- 1
Onion- 1chopped(big)
Green Chilly-3
Ghee-  4 to 5 spoon
Ginger Garlic Paste- 1 spoon

PREPARATION METHOD:
  • Take a pressure cooker and add ghee to it.
  • Heat ghee and add brinji leaf, cardamoms, cinnamon stick, sliced Onions and ginger-garlic paste. 
  • Saute till the onions turn golden brown.
  • Add green chillies, coriander leaves, cumin seeds, shredded orange rinds and saute for 2 mins.
  • Add Pudina to it.
  • Add the basmati rice to it and mix well.
  • Add the Orange juice and milk to it and Add 1/2 tsp salt and mix well.
  • Allow the cooker for 4 whistles and allow it to 5minutes.
  • Serve this hot and tasty Orange Pulav.

Mutton Curry(Village Special)





                                    MUTTON KULAMBU(village Special)

INGREDIENTS NEEDED:
  •  Mutton- ½ kg( boned  mutton)
  •  Roasted Grams(Varukadalai)- 2 spoons
  • Cumin Seeds-1 spoon
  •  Pepper Seeds-1 spoon
  •  Corainder seeds- 1 spoon
  • Fennel Seeds(sombu)- ½ spoon
  •  Red Chilly – 5
  • Coconut grated- 2 pieces
  • Onion chopped- 150 gms
  • Tomato chopped- 2
  • Green Chilly- 2 or 3
  • Turmeric Powder- 1 spoon
  • Ginger Garlic Paste- 1 spoon

Masala Preparation:
·        Take a pan add the following ingredients one by one.
o   Cumin seeds, Pepper seed, Corainder seeds, Fennel seed, Red Chilly,  Grated Coconut, Onion, Tomato
·        Fry the above said ingredients  for sometime and after that finely  grind all the things. Now the masala for Mutton Kulambu get ready.



Preparation Of Mutton Kulambu:

·                               First clean the mutton  and add one spoon of  ginger garlic paste in to it. Add turmeric powder and salt to it. Add some water and allow it to cook for 4 to 5 whistles until mutton get cooked well.
·        Now the  mutton is ready and it time to make Kulambu with all these.
·         Take a fresh pan and add some oil in to it.
·         Add  sombu , followed by that cumin seeds, chopped green chillies  and fry it.
·        After fried, add the masala to it. Allow it boil it for 5 minutes.
·        Then add the cooked Mutton content to it.  Stir it and close the pan.
·         Allow it to cook for few minutes.
·        And at last add some coriander leaves and serve it. The hot spicy Mutton Kulambu ready.

·        INGREDIENTS NEEDED FOR HEALTHMIX POWDER:

  •    Pearl Millet-Kambu -1 kg
  •   Finger millet-Ragi -1 kg
  •    Green gram-Pachai Payaru -1/2 kg
  •    Red Rice-Sigapu arisi-1/4 kg 
  •    Roasted gram-pottukadalai -1/4 kg
  •    Foxtail millet-thinai -1/2 cup (optional)
  •    Horse Gram-Kollu - 100 grams
  •    Barley -100 grams
  •    Almonds -25 
  •    Cashew nuts -10
  •    Peanuts -100 grams
  •    Cardamom -6
  •    Dry ginger-sukku -1 inch piece


    INGREDIENTS NEEDED FOR GHEER:
  •    Carrot – 100gms(Make it to juice)
  •    Sugar- 150 gms(as per need)
  •    Health mix Powder- 2 spoons

Preparation Method for making Health mix Powder:
  •                Dry roast all the ingredients (except cardamom) separately until you get a nice aroma of roasted ingredients. Spread the roasted ingredients on a plate to cool. Then mix everything together. Get it ground in a flour mill to a fine powder. Spread it on a plate to cool and then store it in an air tight container or stainless steel container. Health mix powder is ready.
 Preparation of Healthmix Carrot Kheer:

o   Prepare carrot juice with the carrot cleaned.
o   Take a pan. Add 3 cup of water to it.
o   After get boiled, Add the 2 spoon of Health mix Powder to it and stir it  Well.
o   After it get boiled, add one cup of milk to it and allow it to boil with that. Add carrot juice to it. Add sugar with it and stir it well until it gets to gheer format.
o   Now the healthy mix carrot kheer get ready. Its very good to children.








VEGETABLES MASALA WITH PANEER RECEIPE

INGREDIENTS NEEDED:
  •  Cauliflower- 200gms
  • Carrot- 2
  • Green Peas- 200 gms
  • Potato- 200gms
  • Paneer- 200gms(cut into pieces)
  • Fresh Cream – ½ cup
  • Curd-  ½ cup
  • Capsecum- 5 pieces
  • Green Chillies- 4 pieces
  • Red Chilly Powder- Two spoons
  • Cumin seeds(seeragam)- Two spoons
  • Onion(big)- 3(chopped)
  • Karam masala- 1 Spoon
  • Turmeric powder- 1 Spoon
  • Gingergarlic Masala- 2 Spoon
  • Tomato- 200gms (grinded) and  chopped two tomatoes without pulp
  • Corainder Powder-1 spoon


Preparation Method:

·        Cut all the vegetables as per the  size needed.
·        Add some water in to pan and add all the vegetables into it. Add some salt to it and make it to cook for some minutes.
·        Keep the cooked vegetables aside.
·        Now keep a pan and add some butter to it. After it get melts add some Cumin seeds to it.
·        After fry, add some chopped onion to it and allow it to fry.
·        Add grinded tomato to it and cook it.
·        Add chilli powder, turmeric powder, karam masala,Corainder  Powder to it and allow it to cook.
·        Add green chillies, ginger garlic paste to it.
·        Now its time to add the paneer pieces to it.
·        After this masala with paneer cooked completely, add the cooked vegetables to this masala.
·        Then mix it well. 
·        Mix the fresh cream and curd in to the bowl and beat it thoroughly.
·        Add this mixture to the cooking pan and mix it with masala.
·        And at last add the chopped capsicum and  chopped tomato to it and allow it to cook for 2 to 3 minutes.
·        Now serve it with chappati or for any dishes as you like.

·        The hot spicy Vegetable Masala with Paneer got ready.

Fish Kulambu with Coconut milk

Ingredients:

  • Fish - 1/2 kg ( Any fish) 
  • Oil – As per need
  • Onion – 200gms small chopped finely
  • Tomato – ½ kg(Make it to juice)
  • Tamarind water- one cup(two lemon size tamarind should use)
  • Curry Leaves
  • Coriander powder- 3 spoon
  • Green Chilly- 5(cut in to long pieces)
  • Red Chilly-5 to 6
  • Ginger- 30gms(cut into long pieces)
  • Mustard seed/Kadugu-  1 spoon
  • Coconut milk- one cup
  • Fenugreek seeds/vendhayam- one spoon
  • Chilli powder- two to three spoon
  • Turmeric powder- one spoon
  • Perungayam Powder- half spoon
  • Cumin seeds- one spoon



Preparation:

  • Take a pan and add 100 ml of oil in to it.
  • Add kadugu , Vendhayam, Cumin seeds, Curry leaves one by one and allow it to fry it.
  • Add Red chilli and green chilli one by one  get fried.
  • Add ginger pieces and cook until it gets completely fried.
  • After that add chopped onion to it and make it to fry for few minutes.
  • Then add  Corainder Powder, Chilly powder and turmeric powder to it.
  •  Add perungayam powder to it.
  • Add Tamarind water to it.
  •  Add some amount of water and salt to it and allow it to cook for few minutes.
  • After cook well, add the tomato juice to it and cook it for 5 minutes.
  • Now its time to add the cleaned fish.
  • Add fish one by one  to the cooking pan.Then at last add the coconut milk the gravy. Close the pan and Allow it to cook for 5 more minutes.
  •  Now the hot spicy fish gravy/kulambu ready to serve. We can use any fish for this recipe.
  • This recipe is very tasty and can be serve with rice.



Brinjal Curry


                                                                BRINJAL CURRY

 Ingredients needed:

  • Brinjal- 1//4 kg
  • Oil- as per need
  • Corainder Powder- 2  Table spoon
  • Tomato- 2
  • Onion chopped-200 gms
  • Tamarind water- half tumbler
  • Ginger Garlic Paste- 2 tea spoons


 Preparation Method:


  • First cut the brinjal in to pieces as per the same u needed. Add oil to the  fry pan.
  • Fry  the brinjal for two minutes.
  • After the take another pan and add some oil in to it. Add  chopped onion in to it. Fry it until it gets golden colour. After that add grinded tomatoes  in to it and allow it to mix with onion.
  • After that add ginger garlic paste to it and allow it to cook for  few minutes.
  • Then add coriander powder to it and mix it well. Now pour tamrind mixed water to it and mix it well. Allow it to get cook for 10 to 15 minutes. Now at last add the fried brinjal to this mixture and add some water to it. Add salt to it as per the taste.Wait for 10 minutes  and its ready to serve.
  •  Brinjal curry is now ready. It can be serve as a side dish for biryani.
  • Both green and blue brinjals can be used this for this dish.
