PEERKANGAI PORIYAL -RIDGE GOURD STIR FRY RECIPE

INGREDIENTS NEEDED
  •    Peerkangai-Ridge gourd -1/4 kg or 4 cups peeled and cubed
  •    Green chilli - 4 
  •   Chilly Powder -1 tsp
  •    Salt needed
  •    Grated coconut -1/4 cup
  •    Corainder Seeds - 50 gms
  •    Mustard Seed- 1 tsp
  •    Curry Leaves- few



PREPARATION:
Peel the skin of ridge gourd, remove the seeds and cut it into cubes.


Heat a pan and add  some ghee in to it.
Add Corainder seeds and fry it thoroughly.
After get fried allow it cool and grind it.
Then In another pan heat Ghee and roast the Ridge gourd by adding salt to it .
On Another side, grind the following ingredients separately.
Grated   Coconut, Chilly Powder, Green Chilly.
Now add the grinded coriander to the frying vegetables.
Mix it well and add the other grinded coconut, chilly and chilly powder to it. And also add some salt to it.
Mix it and allow it to cook for few minutes.
Heat some oil in a pan and add mustard seeds , curry leaves. After it get fried,add the cooked vegetable to it and mix it.
 Now the hot Ridge gourd fry get ready to serve.
